The artisan pastry shop da Ily, located in Trieste, just outside the center, was inaugurated in April 2019: the only and exclusive "gluten-free" certified artisan laboratory.
The passion for pastry
Ilaria Gentile loves her work unconditionally, she loves to define herself as a pastry chef because hers is not only a passion that can fade over time, but it is pure Love, the endless kind, the kind you give without wanting anything in return, if not joy and happiness of those who try the sweets she made in the laboratory.
For Ilaria, becoming a pastry chef was an inner need, a real rebirth: being celiac herself, she decided to deepen the methods of pastry by attending numerous courses with prestigious teachers such as Montersino and Di Carlo, she collaborated with important cafés and participated in various events and competitions, including the one organized by the Italian Celiac Association, finishing in first place with a cake of its own creation.
